Why do we have to pray and ask God for things when the Bible says that God already knows what we need before we ask Him?

It is true that God already knows what we need before we ask Him. However, the Bible does teach us that we need to ask in order to receive. Notice the following Scriptures:
But when you pray, do not use vain repetitions as the heathen do. For they think that they will be heard for their many words. Therefore do not be like them. For your Father knows the things you have need of before you ask Him.
(Matt. 6:7-8 NKJ)

Ask, and it will be given to you; seek, and you will find; knock, and it will be opened to you. For everyone who asks receives, and he who seeks finds, and to him who knocks it will be opened.... If you then, being evil, know how to give good gifts to your children, how much more will your Father who is in heaven give good things to those who ask Him?
(Matt. 7:7-8, 11 NKJ)

You lust and do not have. You murder and covet and cannot obtain. You fight and war. Yet you do not have because you do not ask.
(James 4:2 NKJ)
God knows what you and I need before we ask Him for it. We don't have to use vain repetition, simply ask Him one time and be done with it.

Remember, we must ask God to give us what we need. This is God's pattern and it will work to our advantage in all areas of our life.
